To coincide with the observance of World Water Day on March 22, Server Products is launching a new piece of equipment to help foodservice operators conserve water and save money. Server worked closely with a large national restaurant chain to develop a solution to replace the traditional dipper well perpetual-flow sink. Dipper wells are used to rinse and protect service utensils against bacteria growth but may use as many as 30-60 gallons of water per hour and are considered by many not to be environmentally friendly. The result of this collaboration is Server’s new ConserveWell service utensil holder. The unit holds utensils above 140°F, keeping them safe from bacteria growth without the use of perpetual flowing water, thereby saving hundreds of thousands of gallons of water per year, not to mention the cost savings associated with water use and disposal. Utilizing operational practices that minimize the use of water is not only good for the environment but has a big impact on the bottom line.
