When testing a new food product, be it a roller grill item or a grab-and-go sandwich, commit to testing the product in a big way.
Some stores cautiously test new items by only putting out a small amount of the new item and then slowly adding more if they’re selling. Instead, encourage your staff to put out 30 and commit in the beginning. This way more people will see the item and you have a good chance of making a large number of sales. If the item doesn’t sell, of course you’ll need to reevaluate, but you’ll know it’s because of a lack of interest, not because customers didn’t notice it.
