Moffat, manufacturer of commercial convection ovens, proofers and holding cabinets, has launched the new Turbofan 40 Combi Series. The new Turbofan 40 Series Combi oven delivers convenience in a compact 32-inch wide footprint. The Turbofan 40 Series features enhanced settings, which operate in three modes, including combi, convection or steam. Each unique setting delivers improved levels of quality and output across a wide array of products such as patisserie-style baked goods, meat, poultry, fish and vegetables. The Turbofan 40 Series’ compact size and feature set provide optimum flexibility and performance making it ideal for operators seeking to maximize the functionality of their kitchens. Combi mode, designed to ensure a consistent result for proteins, eliminates the need for continuous basting. Additionally, the Turbofan Combi Automatic Moisture Control system monitors and adjusts temperature ensuring consistent results when grilling, frying or regenerating pre-cooked foods. A convection mode employs variable fan speeds with automatic power reduction to reduce energy consumption and a steam mode enhances flavor, color and consistency for maximum precision and control with an automatic steam saturation regulator located inside the cooking chamber.
